By Crystal Kelly,

Back in 1991, on the corner of Clark and Grand in a city called Chicago, a young baker decided to make a living baking bread. It was that very idea that became something more, way more; it became the Corner Bakery Café.

With a variety of items on the menu such as salads, sandwiches, pastas, breakfast flats, Corner Bakery Café currently has over 200 locations nationwide.

The Palms Crossing eatery, located on the Mission/McAllen border is home to 35 employees. It is there that they embody the very goal of Corner Bakery Café… to be your neighborhood meeting place. They want you to feel comfortable ordering something small, such as a pastry and coffee or something on a grander scale, such as bringing in a group of family and friends for a large dinner. With a great ambiance, free Wi-Fi, unique dishes and treats, it is an ideal spot to quietly spend an afternoon studying or meeting with clients.

“While most restaurants want you quickly in and quickly out, we want people to come in and enjoy themselves. Spend the whole day in the dining room or out on the patio”, says Curt Riester, General Manager.

Unique and popular items such as the quinoa pico salad and kale butternut squash salad have customers consistently making Corner Bakery Café their dining choice. Because the focus is definitely on the healthier side, when you visit their website at www.cornerbakerycafe.com, you will pleasantly find 100 different combinations for lunch that are under 600 calories. Corner Bakery Café brings in over 40 different fresh produce items daily that make up most of the food made from scratch everyday.

The Chicken Pomodori Panini has all-natural roasted chicken, fresh basil and spinach, oven-roasted tomatoes and provolone cheese with pesto mayo; it is a favorite amongst locals. Make sure to top it off with a slice of the famous Cinnamon Crème Cake; Corner Bakery’s signature rich, golden cake swirled with ribbons of cinnamon, topped with crumbly cinnamon streusel and powdered sugar. Another favorite is one of their breakfast dishes, pancakes; served like no where else with a one of a kind vanilla maple syrup.
